Tasting note
Pale and bright, with a fine, persistent bead. It drinks crisp. Peach and mango arrive on their own, quietly, with nothing sweet chasing them, and the finish stays clean.
What is in it
Muskoka spring water first, and most. Delicate white tea and green tea for length. Then a measure of Vidal Late Harvest for fruit and body, enough to give it a middle, never enough to make it a wine. Less than 0.5% alc./vol.
Serving
Six to nine degrees, in a tulip rather than a flute. Cold is doing most of the work in this one; served warm it flattens.
How do I open it?
Chill it first. Foil off, thumb on the cork, six half-turns on the cage, then hold the cork and twist the bottle. A sigh, not a bang. Unless you want a bang.
